Roles

RESTAURANT TEAM MEMBER (RTM)

Duties – All Front of House tasks, hosting, taking orders, waiting on tables, bar, food service and client service.

REQUIRED SKILLS/ATTRIBUTES

This is a role that requires the person to gain experience on the restaurant floor, interacting with clients. Most of the skills required are easily attainable. More important than work skills, are personality attributes. This role requires a friendly personality, able to engage clients in conversation, have a pleasant “smiley” disposition and a passion for providing excellent customer service.

As much as coming out for nice food, on some level, most people actually come out to be “entertained”.  If we purely want food, we can go to a take away.  What we want when we go out is a feeling of occasion, something memorable.  Your role is to make them feel they have had a terrific night that was enhanced by the pleasant encounter they have with you.  They want to feel they are being looked after, which means being “attentive”, without being “intrusive”.

If you feel you can offer people a friendly face, with a pleasant manner and quick, courteous service, then this could be the role for you.  You should have or want to develop a love of food and an interest in how food is made.

This role could also be combined with being a Business Team Member or Kitchen Team Member

KITCHEN TEAM MEMBER – (KTM)

Being a chef truly is a role that needs a strong passion for the craft.  It isn’t suited to anyone who merely wants a job.  Your ambition to be a top chef must be paramount to you.

The role requires knowledge of all areas of food preparation, cooking and presentation and importantly, food hygiene.

Required Skills/Attributes

We all have an interest in appetizing, tasty food.  For some, this leads to a curiosity in how it is made and a desire to create their own dishes.  Cooking for one or two is a skill many of us can learn easily.  Cooking for 1-200 a day is a much more demanding role.  You will need to develop a deep understanding of food preparation methods, ingredients, all types of meat, fruit and vegetables, their provenance, what goes well with what and the skills to quickly put them together in a succulent meal.

BUSINESS TEAM MEMBER – (BTM)

Duties – All administrative tasks, including bookkeeping, telephone bookings, sales promotion, Customer Relationship Management, Social Media Management.

A restaurant is a lot more than just cooking and serving food.  To be competitive and profitable in today’s market, requires a high degree of competence across a range of business disciplines, from purchasing, accounts, marketing and dealing with customers on the phone.

We’ve probably all been to (or perhaps walked past) a restaurant where a member of staff is looking forlornly out the window of their empty restaurant.  Sure, there are always some quiet times, but a successful restaurant concentrates on minimizing the quiet times and maximizing the busy times.    A seat in a restaurant is a classic “wasting asset” – it can earn maybe £10 per hour, but once that hour is passed, it can’t be recovered.

Example

You have 10 seats and you fill them 10 times during the week at £10 a time.

  • You will earn 10 x 10 x 10 = £1000.
  • If you fill them 50 times, you will earn 10 x 50 x 10 = £5,000.
  • If you don’t fill them at all, you will earn 10 x 0 x 10 = £0.

So, if you have no one sat in your seats, you earn nothing.  The Business Team Member’s role is to ensure as many seats are filled as often as possible at the highest possible spend.

Required Skills/Attributes

A business Team Member needs to be organized, computer literate, with a confident telephone voice for speaking to potential clients.  You need to be able to plan marketing or social media campaigns, be methodical in following them up by both email and phone or personal meetings.  You must be punctual and business like in all meetings.

You may be discussing or planning someones wedding.  This is probabl;y the most important day in their lives.  You have a huge responsibility to ensure it goes well.

You need a strong desire to ensure any clients planned event or simply a meal is one they enjoy, was memorable and an experience they would like to repeat and tell their friends about.
